As the weather becomes more scorching, most of us do everything we can to stay out of our stifling hot kitchens. Especially in Colorado, where air conditioning is a luxury, a person must have a very good reason to bake a chicken when it is 100 degrees outside. This is the best time of the year to take our cooking outside and enjoy the evening Boulder breeze.
One of my favorite ways to prepare my meals during the summer season is to utilize the grill. Sitting in your backyard, neglected during our infamous winter wind storms, it is begging to be used. Not only can you cook everything you crave on a grill, but you can also get a lovely sun tan while doing so. What could be better? While cooking up your burgers and fresh corn on the cob, you can also grill your favorite fruit for a simple dessert.

Grilled Potato Skewers
Ingredients:
- 4 Medium potatoes, peeled and cut into 1 ½-inch chunks
- 1 Tbs. Olive oil
- 1 Tbs. Butter, melted
- 1 Tbs. Rosemary, fresh, chopped
- 1 clove Garlic, minced
- 1 tsp. Salt
- ½ tsp. Black pepper
Four 12-inch metal skewers or bamboo skewers soaked in water for 30 minutes (so they won’t burn on the grill)
Directions:
- In a saucepan with lid, cook the potatoes in salted water until just tender, about 15 minutes. Do not overcook or they will fall apart on the grill.
- Drain the potatoes, cool for a few minutes and thread on to the skewers.
- In a small bowl, mix the remaining ingredients.
- Place the potato skewers on the grill. Brush lightly with the rosemary mix. Grill, turn and baste several times until the potatoes are lightly browned and grilled. This should be about 10 – 12 minutes.
