Chef John is the owner of Firefly Grilling Co., an eccentric open-fire catering & supper club in the Fort Worth, Texas, area. He’s made guest chef appearances at multiple establishments for over 23 years, worked in recipe and menu development, and also as a pitmaster.
John has held positions in front-of-house and back-of-house roles, and as a Chef Lead at multiple restaurants, from mom-and-pops to fine dining.
In his downtime, John and his family help with a rehab facility in Granbury, Texas, called Second Chance Farms. They donate private open-fire cooks to raise money benefitting handicapped animals, from horses to turtles. They also offer their cookers and services for free lunches to anyone who asks in Fort Worth, when available.
Chef John is passionate about anything related to open fire or BBQ cooking, as well as sustainable farm-to-table culinary techniques.
