Chef Jon has been an Executive Chef and Sous Chef for various Texas establishments, as well as the Owner-Operator of Cajun Cruiser Food Trailer, and recognized as one of the top 5 chefs south of Austin. He’s been featured in magazines and newspaper articles for the chef-inspired quality food coming from a food trailer. Jon also had the pleasure of cooking for a few Food Network chefs and traveling overseas between France and Germany tasting the food and beer.
He’s also worked in recipe development, menu design, and kitchen design.
Jon went free diving for sea urchin in Hawaii to make sushi and did a free dive for hand-caught spiny lobsters in the Florida Keys. He hunts and harvests over 75% of the protein that he eats, whether it be land animals or fish.
