Chef Michele is an Orientation Chef and Tutor specializing in Culinary Writing and has run weekly workshops since joining Escoffier as a staff member (she was also a high honors graduate of Auguste Escoffier School of Culinary Arts in 2019-2020).
She runs a small cottage industry bakery, which combines her passion for pastries, breads, cakes, and cookies with an allergen-focused approach to making delicacies available for all.
Michele’s holistic wellness background as a Board Certified Massage and Bodywork Therapist and Yoga Instructor for over two decades came in handy during the COVID-19 pandemic when her clients knew she was in culinary school. Their needs led her to a career change as they were successful in changing their lifestyles but hated the gluten, dairy and allergen free deserts that were available at the time.
I love a fresh fruit tart and the decadent dark chocolate combined with the fresh tart raspberries is always a favorite flavor profile.
