City of Boulder and local food truck vendors work together to create summer pilot program

If you’re a student at the Escoffier Culinary School in Boulder, you probably know all about the food truck craze that has swept across many cities in the United States, including Boulder.

However, not every government is a fan of this new culinary trend. In some cities, including Washington, D.C., there are stringent laws about where and how a food truck operates, according to the Washington Post.

In Boulder, however, city officials have come up with a new way to actually expand the burgeoning food trend. According to the city’s official website, the government is working with local food truck vendors to spread the Boulder food scene even wider this summer. Because the city has become one of the the biggest foodie towns in America, many Boulder representatives want to see the culinary market here grow.

Starting June 2, mobile food trucks will be positioned in several parks throughout the city. Although the hours will be limited and regulated, this is an excellent example of how government can enhance, not limit, the business and culinary market. To get citizens’ feedback on this new program, the city has put together an online survey for residents to weigh in on the new program, which gets the entire community involved.
