Amy DeLay, Registrar and Compliance Manager

Escoffier: How long have you worked at the Auguste Escoffier School of Culinary Arts and what is your role as Registrar?
DeLay: I’ve been here a little over a year and I’m the Registrar and Compliance Manager. I monitor the progress of every student on campus throughout the program. I monitor their attendance and help make sure they get here every day. I assess any issues that may come up throughout a student’s time on campus so that he or she can be directed to the appropriate resources that are available to help him or her achieve success.

Escoffier: Do you like working here?
DeLay: I do! I like being around all the students and watching them go through the program. It’s really fun to see them in action in the kitchens.

Escoffier: What’s your absolute favorite thing about your job?
DeLay: My absolute favorite thing about working here is seeing students at graduation. I love getting to hear updates on where they’re working and what dream jobs they’ve landed. I love seeing them walk across the stage. It helps me to know that the day-to-day things that I do on campus matter to each student.

Escoffier: If you had one piece of advice to give to incoming students, what would that be?
DeLay: I’m going back to graduation with this one. The students who graduate and are the most successful come to class every day. You are more likely to graduate with honors if you attend every day. My advice is to be here every day! If something comes up, talk to us about it. Communicating with your instructors and the school staff helps us to know your situations and to better help you become successful and that’s what we all want!
