Do you belong to a CSA? If you don’t and you’re unfamiliar with this term, it’s a way of sharing produce straight from the farm, or in other words, Community Supported Agriculture. You buy a share and each week or month you get a delivery of whatever is ripe. It’s a great way to eat local and support your local farmers. In Colorado, especially in early spring and summer, we tend to see a lot of the same produce over and over – most comprised of greens, greens, and more greens. Don’t stress, or get sick of seeing your favorite colored crop. The following is a list of dishes you can make that will spice up your greens and CSA deliveries.
- Quinoa and Green Salad
- Southern Style Braised Greens
- Ravioli Stuffed with Spicy Greens
- Greens Grilled on Panini Sandwiches
- Baked Eggs in Tomato Sauce and Braised Greens
- Mustard Green Quesadillas
- Turnip Greens and Asparagus Stir Fry
- Green Eggs and Veggie Scrambled Eggs
- Carrot Green Pesto with Pasta
- Chicken and Greens Pot Pie
- Grilled Pizza with Spicy Sausage, Sweet Onions and Microgreens
