Working full-time and being a full-time mother doesn’t leave much time for school, but
Venissa Roybal is making it work. From an early age Roybal loved spending time baking with
friends and family, and even worked as a baker in a nursing home. She knew she wanted to take
her baking career to the next level, but couldn’t invest in a 2 or 4-year program. Since Escoffier
offers an 8-month Pastry Arts Program with 3 options of morning, mid and evening, Roybal
enrolled in Escoffier’s PM pastry course. She is now nearing the end of her pastry program and
will begin her externship on May 15th.

For myself and many students, a 2 or 4-year program is simply out of the question. For
me, I already have my bachelor’s degree and when I decided to go back to school I couldn’t
attend another 4-year college. I researched culinary schools all over the U.S and wasn’t finding
any programs that fit my schedule. It wasn’t until I searched for Farm-to-Table culinary schools
that I found Escoffier’s 10-month culinary program. Since I need to work during the day, the PM
culinary course was the perfect option for me. Escoffier offers flexible educational opportunities
to fit anyone’s hectic schedule and which makes education more accessible to everyone.
