Music, Merriment and Monsieur (Croque, that is!). Our Escoffier Boulder Open House this past Saturday was a huge success. Our Chef Instructors and Chefs-in-Training did a wonderful job welcoming all of our potential students and their families to the Auguste Escoffier School of Culinary Arts. The music (performed by one of our own culinary students) was a perfect addition to a sunshine filled day.

Among the items served: a buttery pan-seared Croque Monsieur, made more decadent with Brioche bread. Duck confit salad was a hit, finished with a cherry vinaigrette and fresh local greens – summer on a plate! The steak au poivre was perfectly juicy, and wonderfully complemented with a pan jus. Dessert came in the form of a replication of the cake made for Julia Child’s 90th birthday, by one of our own Chef Instructors! Auguste Escoffier would have been proud.
