Graduate Spotlight

This could be you!

Rick Gallup moved from a small suburb of Chicago to attend Auguste Escoffier School of Culinary Arts and interned at Fate Brewing Co., Dillinger’s and Mud Rocks in Boulder, Colorado. He also worked with Career Services to find work after his internship, and when a chance to move to Europe arose, Gallup jumped at the opportunity.

Gallup secured his placement with La Maison de Bournissac, a 1 Michelin Star restaurant and hotel in southern France. Although he doesn’t know what to expect, Gallup is incredibly excited to begin this new journey and pursue a dream that he never thought was attainable.

How Escoffier helped me: “Where I’m going now is a place I never expected. I honestly didn’t expect to get a job in France. Thanks to Auguste Escoffier School of Culinary Arts and to what I already know how to cook and everything I’ve ever done, Escoffier has completely taught me everything to fill in all the details and really learn something about cooking. Being in the industry for as long as I have been, I know how to cook food, but to fill in the gaps, the voids, to properly learn everything that I have done, and in a classical sense, has been what Escoffier has done for me.”

Opportunity to network: “Not only has the school properly educated me, they have also given me the ability to network, to know where I can have opportunities in front of me, or else I wouldn’t be moving to France if I didn’t have the networking or Chef Instructors who can get me that closely knit in the entire community of the service industry.”
