On June 3, Escoffier students had a great opportunity to prep and plate for a number of well-known chefs at Edible Austin’s first Texas Wine/Food Match. Local chefs Kelly Casey (Hudson’s on the Bend), Patrick James Edwards (Bin 555), David Garrido (Garrido’s), Josh Raymer (Navajo Grill) and Peter Smith (JW Marriott) competed in the magazine’s wine and food pairing competition, creating the ideal three-course tasting menu. Along with their culinary duties, students also met with celebrity chef and contest judge Jacques Pèpin for a quick photo op!
Held at the AT&T Center’s Carillon Restaurant at the University of Texas -Austin, during the 33rd International Association of Culinary Professional’s conference, celebrity chef Jacques Pepin internationally known professional French chef, educator and cookbook author mingles with faculty and students of the Auguste Escoffier School of Culinary Arts – Austin before the gala 15 course cooking competition. Attended by Austin “Foodies” proceeds of the event benefitted the Texas Wine and Grape Growers Association.
Other culinary luminaries present to judge were French Chef Patrice Dionot from L’Academie De Cuisine, and Michael Bauer ,Wine Critic from the San Francisco Chronicle. 5 Competing Chefs from regional restaurants focusing on Farm to table education and sourcing, provided 3 tasting portion each of an appetizer, salad and entrée. All 15 mini courses were accompanied by 15 wines from Texas. Many of the Auguste Escoffier School of Culinary Arts students were offered ‘stage’ opportunities and one was offered an opportunity to interview for a position at a leading restaurant in Austin.
