Eggplant is in season and my neighbor keeps filling my arms with the dark purple produce. Refusing to listen to my kind refusals, she keeps plucking them from her lush garden and stacking them before me. If your garden is overflowing with eggplant Baba Ganoush is a great use of this vegetable. If you are planning on gifting the eggplant you might also include the recipe with the eggplant bounty.

Baba ganoush is a great way to whip up a healthy dish with eggplant. Slather it on a sandwich or dunk carrot sticks into its thick, creamy goodness. If your kids are weary of eggplant, Baba Ganoush will surely help sway them towards seeing how great it really can be.

1 Medium eggplant
2-3 cloves of garlic, minced
Juice of one lemon
1 Small container of lowfat Greek yogurt
1 Tablespoon olive oil
4 Tablespoons tahini
1 Tablespoon honey
