Avocados are a distinctive and delicious part of many fantastic dishes from guacamole to soup. However, Austin culinary arts students are missing out if they don’t seize the opportunity to include this amazing fruit in their desserts. Try one of these recipes to discover the flavorful possibilities of avocado-based treats.

1. Take pudding to the next level

With its rich taste and creamy texture, avocado is perfect for making pudding. Minimalist Baker suggested a version that also includes peanut butter, chocolate and loads of nutrients.

The recipe begins with placing avocado in a food processor with a banana, unsweetened cocoa powder, peanut butter, honey and almond milk and blending until smooth. Depending on your preferences, you may want to throw in more chocolate or sweetener to adjust the flavor or pour in more milk to thin out the mixture. Once you’re satisfied, pour into serving glasses, cover with plastic wrap and refrigerate for a few hours.

When you’re ready to serve the pudding, top with a coconut whipped cream made by combining chilled coconut milk, vanilla extract and powdered sugar. Finish off the dessert with a drizzle of salted peanut butter.

2. Top cupcakes with something different

Traditional cupcakes are reliably portable and satisfying, but experimenting with the ingredients can open up whole new dimensions. The Food Network offered a recipe pairing simple cakes with an irresistible avocado buttercream frosting.

Use a whisk to combine flour, baking powder and salt. In a separate bowl, whisk together eggs and granulated sugar before adding butter, vanilla extract and orange zest. Combine the wet and dry ingredients, along with a half cup of milk. Place the batter in muffin tins with cupcake liners. Bake in an oven set to 350 degrees Fahrenheit for up to 20 minutes, rotating the pan once.

While the cupcakes cool, prepare the frosting by processing the flesh of two avocados and a stick of butter until smooth. Keep running the food processor as you add a quarter cup of heavy cream. Then, pulse powdered sugar into the mixture. Add the frosting to the cupcakes and serve.

3. Bring fresh excitement to homemade ice cream

Preparing a batch of ice cream is a sure way to make guests and family happy. With some avocado in the mix, this frozen treat can be even better. Foolproof Living provided directions that combine the beloved produce with coconut milk.

Start by using a food processor to puree three avocados. Add coconut milk, heavy cream, sugar, lime juice, a little salt and half a teaspoon of rum. Process for 30 seconds or until the mixture is smooth.

Pour the mixture into a bowl, covering with plastic wrap, and place in the refrigerator to cool. Once it’s cold, move to your ice cream maker and churn. Then, place in an airtight container and freeze. Serve with a garnish of toasted coconut.

4. Craft an awesome tart

When you’re combining avocado with classic desserts, it’s the ideal chance to get creative. That’s what Fragrant Vanilla did by creating a lime avocado tart. It features a crust made by processing macadamia nuts, coconut and buckwheat before adding medjool dates and sea salt.

Once the crust mixture begins coming together, press into the bottom and sides of a pan treated with nonstick spray. Set the pan in the freezer, and get started on the filling by processing avocado, coconut, maple syrup, sea salt, vanilla extract and lime juice and zest. Keep the processor running while pouring in coconut oil.

Add the filling to the crust and place in the freezer for two hours. Meanwhile, make the topping by processing cashews, coconut water, sea salt,syrup, vanilla and coconut oil. Place this mixture in the freezer for about half an hour before adding to the tart and serving.
