  1. Week 01: Stocks, Sauces, Soups & Stews

    • Stocks (White and Brown Stock)
    • Mother Sauces and Derivatives
    • Soups and Stews
  2. Week 02: Garde Manger & Pastry Basics

    • Cold Sauces (Mayo and Vinaigrette)
    • Salads (Green, Bound, and Composed)
    • Flours, Sugars, Fats, and Leaveners
    • Measuring, Scaling, and Baker’s Percentage
    • Creaming, Blending, and Cut-In Methods
  3. Week 03: Cooking Methods

    • Effects of Heat (Coagulation, Caramelization, and Gelatinization)
    • Dry Heat Techniques (Roast, Grill, Sauté, Fry and Confit)
    • Moist Heat Technique (Poaching, Simmering, Boiling, Steaming)
    • Combination Cooking (Braising)
  4. Week 04: Building the Plate

    • Vegetable Cookery (Pigments)
    • Starch Cookery (Grains, Rice, and Pasta)
    • Animal Proteins (Beef, Veal, Pork, Lamb, Poultry, and Fish)

Sessions are tied to that week’s course content and may include Q&A, demonstration, coaching, or guided technique discussion depending on the topic. Recordings are posted to the course page after the session.
