Farm To Table® Experience
We are proud to partner with a variety of Boulder’s best local farmers, ranchers and artisans. Our current curriculum for the 40-week Culinary Arts program includes the three-week Farm To Table® Experience. The purpose of the Farm To Table® Experience is to provide students with hands-on direct learning and assure that students will be exposed to in-depth knowledge of where food comes from, the advantages of buying local, various farming and production methods, and how to continue to make the best sustainable and ethical ingredient choices throughout their culinary careers.
Variety of Experiences that a student may participate in during their training:
(will vary by cohort, time of year, location, and requirements for farmers and artisans)

Produce Farms (vegetables, herbs, grains)
- Experience the passion and commitment family farmers and ranchers have for integrative, sustainable farming practices
- Study seeding, seed transplanting, row planting, hydroponics, and hoop house and green house practices

Livestock Farms (cattle, pigs, poultry, sheep, buffalo, bison)
- Tend to and work with farm animals and livestock
- Experience live animal production

Dairy Farms (eggs, milk, cheese)
- Tend to care of the chickens and gathering of eggs
- Milk goats or cows
- Process the fresh dairy into cheeses and butter

Artisan Partners (work with a variety of local, sustainable products)
- Learn the art of charcuterie and sausage making
- Canning and making preserves
- Learn about the coffee industry, and how coffee is processed and roasted
- A variety of opportunities with breweries, distilleries, and wineries
- Pack Community Supported Agriculture (CSA) boxes, and prepare for and work at local Farmer’s Markets
- Prepare Seasonality-Based Meals with chef instructors and local guest chefs using fresh, locally harvested products
