After a considerable wait and an unbelievable amount of excitement and anticipation, Hosea Rosenberg’s Blackbelly is set to open in Boulder on Nov. 11, 2014, according to Westword. Blackbelly Market, which will operate as a restaurant and a sort of deli and grocery store, has been coming together for several years now in a slow process that has only built excitement in the Colorado city. Though its name bears a moniker only indicating the presence of one, Blackbelly Market will operate as both a restaurant and market for meats, produce and other culinary fare. Further, the establishment intends to also include a catering business, a butcher shop, a deli and will also make its own sausage and cured meats. The final product of the multi-faceted restaurant is somewhat indicative of the process that Rosenberg went through in an effort to open it.
