Something magical happens when bread and cheese come together. Birds sing, the sky opens and deliciousness is rained down upon your mouth. It’s an almost universal truth, too, as you can see in this incredible, edible photo, bread and cheese just GO together! From the classic American style grilled cheese to Brazil’s addictive pao de queijo to Scotland’s sharp cheddar shortbread. Grab your flours and favorite cheese and let’s bake!

The Cheddar Vortex Bread

Crusty Cheesy Loaves Ingredients

Make starter:

Mix bread flour, salt, yeast, and water until combined. Cover and rest overnight.

Mix starter WITH:

Second flour, salt, water and yeast.

Mix with hook about 10 minutes.

Ferment 120 minutes at 70F in greased bowl.

Punch down and spread into 3/4″ rectangle (9×12)

Spritz with water and sprinkle grated cheese.

Roll into log and close ends.

Cut into slices and align on pan 3″ apart.

Cover and proof 90 minutes at 70F

Spritz with water

Bake 20 minutes at 425F

Try to keep your hands off it long enough to cool so you don’t burn your face!
