A new seafood restaurant is coming to Boulder. Students taking culinary classes in Boulder will soon have yet another example of the best in fine dining to base their studies and ambitions off of. According to The Daily Camera, restaurateur Bradford Heap has announced plans to open a seafood restaurant in Boulder in the near future. Heap has already established himself among the elite ranks of the Colorado culinary scene by owning two restaurants, one of which is a joint project between himself and his wife, Carol Vilate. The restaurant, which has yet to be named, will certainly be up against some stark competition in the burgeoning food scene that Boulder has developed, but many expect the establishment to be a smash hit. Take a look at a few of the details surrounding Heap’s newest project.

The restaurant
While Heap has yet to select a name for his newest project, it has been made clear that the restaurant will focus on delivering quality seafood to its patrons. Indications have already been made that there will be an emphasis made on sustainably fished dishes as well as a wide variety of vegetarian options. Heap has also made clear that there will be an oyster bar in the restaurant. In speaking with The Daily Camera, Heap made clear that much of the food on the menu will gravitate towards paleo-friendly options, as he has recently taken up that diet himself.

“A lot of the time the food that I like to do is the food that’s reflective of how I like to eat,” Heap told the Camera. “This is an evolution of that.”

The location
In several ways, the location of the forthcoming project from Heap is news in itself. The restaurant will be located at 1043 Pearl Street in downtown Boulder’s Pearl Street Mall, directly next door to another restaurant owned by Heap, Salt Bistro. 5280 has reported that the space was formerly occupied by PastaVino, but that the Italian restaurant closed permanently in November 2014. While it’s impossible to predict exactly how successful Heap’s unnamed seafood restaurant will be, the fact that he has signed a 10 year lease with the building management company who owns the space is indicative of a great deal of confidence on his part. Heap had apparently tried to make a bid for the space in 2011 when the tenant prior to PastaVino, Juanita’s Mexican Food, closed permanently, but had no luck. Now, his newest restaurant will join a line of star-studded, organically-driven establishments including his own Salt Bistro. In speaking with 5280, Heap indicated great excitement for what the seafood restaurant will bring to the area.

“I’ve wanted that space for about four years. It’s not often you have an opportunity like this – to have four organic, farm-forward, sustainable restaurants in a row,” said Heap. The establishment is set to open in February 2015 barring any delays and is eagerly awaited by Boulder residents.
