Learning how to make oatmeal cream cookies!

Look out Lil Debbie – Chef Anne is coming for ya! Just imagine the happy smiles you’ll receive in return for fresh-out-of-the-oven homemade cookies! That’s probably the best present ever. Psst… If you like to have cookies on hand that are ready to be baked, you can shape and freeze the dough for later. That way, when you have a craving or need, you can just bake up however many you desire.

Oatmeal Cream Cookies

Ingredients: 

1 lb butter
12 oz brown sugar
14 oz granulated sugar
4 eggs
1/3 oz vanilla
21 oz AP flour
15 oz rolled or old-fashioned oats
dash salt
1/4 oz baking powder
1/3 oz baking soda
20 oz raisins (OPTIONAL)

Method of preparation:

Creaming method

Slightly chill batter before scooping.

After scooping, freeze until ready to bake.

Pre-heat oven to 350F.

Place frozen cookies on sheet pan and bake until done.

 

Oatmeal cream pie cookies

Cream Filling

Ingredients:

3/4 cup unsalted butter (1.5 sticks) at room temp

3 c. powdered sugar

3 Tb heavy cream (more or less as needed for consistency)

1.5 tsp vanilla extract

pinch salt

Method of preparation:

Sift powdered sugar.

Cream butter and sugar until light and fluffy.

Add vanilla. Add cream to desired consistency.

Add salt as desired.

Allow this to be soft, but still stiff enough to hold up under weight of cookies.
