Oatmeal Cream Cookies
Ingredients: 1 lb butter |
Method of preparation: Creaming method Slightly chill batter before scooping. After scooping, freeze until ready to bake. Pre-heat oven to 350F. Place frozen cookies on sheet pan and bake until done.

Cream Filling
Ingredients:
3/4 cup unsalted butter (1.5 sticks) at room temp 3 c. powdered sugar 3 Tb heavy cream (more or less as needed for consistency) 1.5 tsp vanilla extract pinch salt |
Method of preparation: Sift powdered sugar. Cream butter and sugar until light and fluffy. Add vanilla. Add cream to desired consistency. Add salt as desired. Allow this to be soft, but still stiff enough to hold up under weight of cookies. |
