This past month students from the entire student body of Auguste Escoffier School of Culinary Arts were challenged to create dishes that included spring produce. The Spring Break Challenge took place from March 26 to April 6, 2021 and encouraged students to break out of their comfort zone and try seasonal produce for both inventive culinary and pastry delights. They were asked to upload photos of the dishes they prepared for a chance to win AESCA swag. As in past challenges, Instagram was the selected platform for the contest and students were instructed to use #EscoffierSpringbreakChallenge and tag us at @escoffierschools. Entries ranged from appetizers, to sides, to main courses, and deserts…but they had to include something seasonal. We provided a bit of inspiration with some advanced produce hints that included some spring favorites like artichokes, spinach, asparagus, onions, rhubarb, strawberries, and much more. We were so excited to receive almost 500 entries in just over a week’s time! The platings were astounding and the creative use of these ingredients clearly demonstrate that our students are learning and practicing their culinary and pastry skills.

Awards for the 2021 Spring Break Challenge consist of:

  • 1st Place – Five winners: AESCA Backpack
  • 2nd Place – Ten winners: AESCA Water Bottle
  • 3rd Place – Ten winners: AESCA Apron
  • 4th Place – Ten winners: AESCA Mug

Dishes were judged by Escoffier Chef Instructors Chef Anne Lanute, Chef Tyson Holzheimer and Chef Bryce Norblom on the following criteria:

  • Creativity
  • Technique
  • Presentation
